A Deba knife is a traditional Japanese kitchen knife with a thick, sturdy blade, primarily used for filleting fish. It features a single bevel edge and a pointed tip, allowing for precise cuts through flesh and bone. The heavy spine and strong heel make it suitable for cutting through small to medium fish bones, while the razor-sharp edge ensures clean slices. Deba knives typically range from 150mm to 210mm in length and are favored by sushi chefs and fishmongers for their power and precision.

This is a handmade very high quality knife that was found in an estate sale in Japan. When I received it it was rusty and needed a lot of TLC to bring it back to life. It's a one-of-a-kind and in the images you can see the forging. I put a Curly Maple and Rosewood handle on it.
